Sodium diacetate (SDA), a molecular compound of sodium acetate and acetic acid, is also known as monosodium diacetate or solid acetic acid in Japan. It presents as a white crystalline powder, hygroscopic with a faint acetic acid odor, and is flammable. Highly soluble in water and ethanol, it exhibits very low toxicity, with an oral LD50 of 3.31 g/kg for mice and 4.96 g/kg for rats, and an acceptable daily intake (ADI) of 0–15 mg/kg. Its final metabolites in organisms are water and CO₂, ensuring no residual accumulation or harmful effects on humans, animals, or the environment.
