Crocin is a reddish-brown, needle-like crystalline compound with a slight odor. It is readily soluble in hot water, forming an orange-colored solution, and is slightly soluble in anhydrous ethanol, ether, and other organic solvents. It is insoluble in oils.

Its aqueous solution is weakly acidic to neutral and exhibits a transparent, bright yellow color with a maximum absorption wavelength of 442 nm. The color is largely unaffected by changes in pH. Crocin demonstrates good resistance to light and heat under neutral or alkaline conditions, although its stability is relatively poor in acidic environments.

It also shows good resistance to most metal ions, except iron, which may cause darkening. Crocin provides better coloring performance in proteins than in starch and maintains its coloring ability across a pH range of 4–10.
