Product Application of Pectin CAS#9000-69-5
Pectin is a gum consisting of the methylated ester of polygalacturonic acid. It is primarily obtained from citrus peels and apple pomace. The degree of methylation (DM), or degree of esterification (DE), refers to the percentage of acid groups present in the form of methyl esters.
Pectin is generally divided into two main groups: high-methoxy (HM) pectin, which has a degree of esterification of 50% or greater, and low-methoxy (LM) pectin, which has a degree of esterification of less than 50%. These two types of pectin form gels under different conditions.
Low-methoxy pectins can be further classified into low-methoxy amidated pectin and conventional low-methoxy pectin.
