Potassium Bromate CAS#7758-01-2
Potassium bromate is the potassium salt of bromate and is commonly used as a flour improver in the United States. It helps strengthen dough and promotes greater dough rise during the bread-making process.
Potassium bromate (KBrO₃) is an oxidizing agent that has been used as a food additive, primarily in bread production. However, it has been identified as a potential carcinogenic agent. Studies have shown that potassium bromate is carcinogenic in rats and can cause nephrotoxic effects in humans and experimental animals when administered orally.
Research has demonstrated that KBrO₃ can induce renal cell tumors, peritoneal mesotheliomas, and follicular cell tumors of the thyroid. In addition, studies investigating its carcinogenic mechanism have indicated that KBrO₃ acts as a complete carcinogen, exhibiting both initiating and promoting activities in rat renal tumor development.

Product Application of Potassium Bromate CAS#7758-01-2
Potassium bromate (KBrO₃) is primarily used as a flour-maturing agent and dough conditioner. It has been recognized as one of the most effective dough conditioners in the baking industry. However, scientific evidence published in 1990 raised concerns about the potential carcinogenicity of bromate. In response to these potential health hazards, the Joint Food and Agriculture Organization of the United Nations and the World Health Organization decided to remove potassium bromate from the list of approved flour-treatment additives.
For non-food applications, KBrO₃ is used as an oxidizing agent, primary standard, and brominating agent in analytical chemistry. Its oxidizing properties have also been utilized in neutralizing formulations for home permanent-wave treatments, typically at concentrations of 5%–25% and a pH range of 4–9, together with sodium bromate, sodium perborate, or hydrogen peroxide.
