Glucosamine has the molecular formula C₆H₁₃NO₅ and a molecular weight of 179.17. It is a polyhydroxylamine compound that naturally occurs in the cell walls of crustaceans, insects, molds, and bacteria in the form of polymers or derivatives. Chitin, a condensate of N-acetyl glucosamine, can be converted into glucosamine through hydrolysis in water.

The alpha form of glucosamine exists as crystals with a melting point of 88℃ and exhibits a change in optical rotation from [α]D²⁰ 100° to 47.5° (after 30 minutes) in aqueous solution. The beta form can be obtained as needle-shaped crystals from methanol, decomposes at 110℃, and shows a change in aqueous solution from [α]D²⁰ 28° to 47.5° (after 30 minutes).

Glucosamine is soluble in water and hot methanol, slightly soluble in cold methanol and ethanol, and insoluble in ether and chloroform. It is naturally present in substances such as crustacean shells, mucin, and related biological materials.
